Steps
  1. Preheat your oven to 190 degrees. Put the sugar, water, salt and butter in a pot and bring to a boil. Add the flour and dissolve it in it, put it back on the stove, turn the heat down and cook for 3 minutes stirring rapidly and cool it. Add the eggs one by one and knead the dough. Pour the dough into a piping bag. Line the tray with baking paper and squeeze out 20-22 pieces, leaving two centimeter intervals. Place in the oven and bake for 30-45 minutes until the tops are well browned.
  2. Put the milk in a saucepan and start heating. In another mixing bowl, mix the sugar, salt, starch and vanilla, add the egg yolks and homogenize. When the milk reaches the boiling point, slowly add the egg mixture. Remove from the fire when the cream thickens well. Add the butter. When it cools down, add the pumpkin puree and whisk.
  3. Put the butter, sugar, cream and salt in a sauce pan and cook for 5 minutes. When it is warm, add tahini and mix.
  4. Cut the profiterole balls in half widthwise and divide the pumpkin cream between them. Drizzle the tahini sauce over them and sprinkle the seeds.
